A ticket type can ask for a percentage or a fixed amount up front. The customer pays that to hold the place; the rest is recorded as due. It is charged at the checkout, so it needs a card gateway — with offline payment alone the whole amount changes hands at the venue and there is nothing to take now.
A workflow can chase the balance before the date, and the door list shows who still owes what before you let anybody in.
